This Chicken Chow Mein recipe is quick and easy on a busy night. It is a family favorite that can be customized with pretty much any veggies you have left in the fridge. It is also easy to make in bulk for easy leftovers or Sunday meal prep.

We love Chinese food however feeding a family of 4 can get pretty pricey. I also am a person who is very sensitive to MSG. It gives me migraines so being able to monitor the ingredients in my food is a definite plus.

I have made several varieties of this dish using whatever protein and vegetables I have on hand however this recipe for Chicken Chow Mein is our favorite.

Chicken Chow Mein

Ingredients

  • 2 lbs diced chicken breast
  • 4 cups shredded cabbage
  • 2 Tbsp minced garlic
  • 2 cups shredded carrots 
  • 3 cups broccoli (cut into small pieces)
  • 6 green onions 
  • 1 cup diced mushrooms
  • 17.76 oz Yaki-Soba noodles

Chow Mein Sauce

  • 3 Tbsp Soy Sauce
  • 3 Tbsp Rice Vinegar
  • 2 Tbsp Fish Sauce 
  • 1 Tbsp Hoisin 
  • 1 tsp Sesame Chili Oil
  • 1 1/2 Tbsp Cornstarch
  • 1 1/2 Tbsp Sugar
  • Black or White Pepper to taste

Instructions

  1. Mix ingredients for the saucechow mein
  2. Dice chicken breast, place in a bowl, mix in 3 tbsp of prepared sauce.chicken chow mein
  3. While chicken marinates, cut up/prep all veggies.chicken chow mein
  4. Open Noodle packets, place in a colander, and run water over until noodles loosen up and separate.chow mein noodles
  5. Heat 2 Tbsp oil in a large pan over medium/high heat.
  6. Add Chicken to pan chicken chow mein
  7. Cook chicken until it begins to brown (1-2 minutes)
  8. Add Broccoli and diced green onion (white portion only)chicken chow mein
  9. Stir Fry for 1-2 min then add 3 tbsp of water and cover the pan with a lid to steam broccoli.
  10. Steam until broccoli softens to almost desired tenderness.
  11. Add Cabbage, Carrots, Mushrooms, and Green Onions (green part)chicken chow mein
  12. Continue to stir fry all ingredients over medium/high heat
  13. Add noodles and sauce
  14. Stir Fry until noodles are heated thoroughly chicken chow mein
  15. ENJOY!

Notes

Tips and Tricks

  • This dish cooks quickly so be sure to have all ingredients prepped prior to starting the stove.
  • If you cannot locate the chow mein noodles, you can substitute them with ramen noodles or even use spaghetti!
