Mexican Beef Casserole

This Mexican Beef Casserole is one of my go-to recipes for meal prep. It is so easy to throw together and tastes amazing! You can adjust the ingredients to fit your taste buds. We switch it up to keep it exciting week to week but this is the best combo I have created so far.

Step One

Sautee onion and brown beef, then add rice, corn, taco seasoning, and spinach.

Add beans, fire-roasted tomatoes, and salsa

Step Three

Add 1/2 cup cheese and broth, stir until all ingredients are combined.

Step Four

Pour into the prepped casserole dish and bake for 45 minutes or until rice is desired tenderness.

Step Five

Add the remaining 1/2 cup of cheese to the top and return to the oven until the cheese is melted.

Ingredients

  • 1 lb 90/10 ground beef
  • 2 TBSP Taco Seasoning
  • 1 yellow onion (diced)
  • 2 cups chopped spinach
  • 1 can (14 oz) pinto beans
  • 1 cup frozen fire roasted corn
  • 1 can (14 oz) fire roasted diced tomatoes
  • 1 cup salsa
  • 1 cup rice (uncooked)
  • 2 cups beef broth
  • 1 cup shredded Mexican cheese

Instructions

  1. Preheat oven to 375 degrees F.
  2. Spray casserole dish with cooking spray.
  3. Add beef and onion and rice to a large skillet, sautee till meat is browned and onions begin to soften.
  4. Mix in spinach taco seasoning and corn.
  5. Add beans, roasted tomatoes, and salsa.
  6. Mix in 1/2 cup of cheese and broth.
  7. Pour into the prepped casserole dish.
  8. Bake in the oven for 45 min or until rice is desired tenderness.
  9. Add remaining 1/2 cup cheese to the top of the casserole and return to the oven until melted.

Notes

  • Top with salsa, Tapatilo, sour cream, or enjoy as is!

If you are looking for a lighter meal, add a scoop of this casserole to the top of a bed of lettuce to make a delightful taco salad.
