Halloween Cookie Casserole

I call it the Halloween Cookie Casserole. You may ask, “Why is this considered a casserole?” Well, the answer is, it makes it sound healthier. The fact is, you would be hard-pressed to fit more calories into one small dish. Yet still, I’d say, DO IT!

Halloween is fun, we all know that. The thrill of filling up buckets of candy is every kid’s dream. Parents on the other hand are not so excited the next morning when they see the mountain of candy in the kitchen. For the first couple of days it is fun, you indulge in a piece or two when you walk by the bucket. By the 3rd or 4th day, the little voice inside your head tells you enough is enough.

You know you should give it to the dentist for some money or find a charity who is willing to take it or send it to the troops. These are all the *better* choices you have. Instead, you let it sit on the counter for a few more days, slowly disappearing as all the hands in the household indulge a piece at a time.

A week passes, ENOUGH IS ENOUGH! What to do, it must ALL GO! Well, my friends, let me introduce you to the Halloween Cookie Casserole.

This delightful creation is a combination of all the leftover chocolate candy you have diced up into pieces, layered in between chewy cookie dough. You’re welcome.

Halloween Cookie Casserole

This Halloween Cookie Casserole will surely be a family favorite. Customize with your favorite leftover candy from the holidays. Due to the amount of yum in this recipe, the key is cooking it low and slow. Cook until the top is nice and brown. The center will still be gooey but once it cools completely it will become an amazing chewy center.

Prep Time 10 minutes
Cook Time 25 minutes
Additional Time 1 hour
Total Time 1 hour 35 minutes

Ingredients

  • 1/2 C granulated sugar
  • 3/4 C brown sugar (packed)
  • 1 tsp salt
  • 1/2 C melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2C all-purpose flour
  • 1/2 tsp baking powder
  • Any and all chocolate candy you want to add (diced)

Instructions

  1. Pre-heat oven to 300.
  2. Mix melted butter with brown and white sugar.
  3. Mix in eggs, salt, and vanilla
  4. Add flour and baking soda
  5. Once mixed divide into two sections.
  6. Prepare a casserole dish by spraying with cooking spray
  7. Press 1/2 dough into the bottom of the dish
  8. Cover dough with a layer of diced chocolate candy
  9. Press second half of dough covering diced candy
  10. Sprinkle any leftover chocolate candy to the top.
  11. Bake at 300 for 25 min then check (time will vary based on how thick your casserole is)*
  12. Allow Halloween Cookie Casserole to cool completely before serving.


*cook until top is browned, the center will remain gooey** due to the amount of chocolate added to the center layer.
