Garlic Chicken Bowls are one of my favorite meal prep recipes. They are so easy to make, yet have so many flavors that come together for a tasty lunch you can actually get excited about. My husband is a chicken thigh lover however in an effort to live a healthier lifestyle I try my best to stick to lean meat for the most part. For this recipe, I use thin-cut chicken breast (marinated for a minimum of 4 hours). I find that marinating my chicken breast is key to locking that moisture and flavor in. I do like to surprise him every now and again with thighs.

Garlic Chicken Bowls are so easy to make in bulk or a single serving. I often make 6 servings at a time so that my husband and I each eat it 3 days during the week. Since he is a bigger guy who needs a little more to fill up. I increase his serving to 6 oz of meat, some extra veggies, and 1/2 c rice. Since meal prep has become such a big part of our lives over the last few years I have embraced a few time-saving tricks along the way. They do cost a little bit more so I only use these when I am low on time.
I find that allowing myself to use these shortcuts makes the thought of meal prepping more manageable. I remind myself that even if I spend a little more on these things it is still saving money versus ordering out!
The best part is you can use the base idea as a template and customize it to your taste buds. I use this in several variations including my Turkey Taco Salads!
